Located two and a half hours north of Manhattan by train, the Culinary Institute of America in Hyde Park is the top culinary school in the U.S. As part of RESOBOX’s aim to foster collaboration with aspiring chefs, we had a productive meeting with the Institute’s director to discuss the use of Japanese ingredients.
