A Kazari Maki-Zushi’s design can be anything – flowers\, fruit\, animals\, words and even logos! Whatever your creativeness allows\, Kazari Maki-Zushi can be almost anything. Using various natural colors of ingredients you see every day\, Kazari Maki-Zushi is a fun way to play around with sushi designs. This food/art form has been developed for over 150 years\, and still\, new ideas are created everyday in Japan. And it’s even a great way to show off your artistic skills at parties or potlucks! \nAlthough it looks difficult\, this decorative sushi is very simple and easy to make! No prior experience is necessary as it involves a different process than creating regular sushi. Making Kazari Maki-Zushi is much like building with Legos\, where each piece is stacked to make a picture!  \nKazari Maki-Sushi represents an important unique aspect in Japanese food –  not only in taste\, but also in the beautiful visual appearance that serves to please those who enjoy it. Got kids? Work\, like even two jobs ? Need to spend less time and money cooking and more time enjoying food? We know what you need to know. \nMakiko Ishida (Maki) is a koji enthusiast\, and a busy parent that knows how to budget time without sacrificing nutrition or taste for her family. A native Tokyoite who was born into a katsuobushi (fermented bonito) trading family. Maki-san has a unique sense of how to blend traditional Japanese food with everyday American fare. She likes to share easy and fast Japanese home-cooking ideas using koji-fermented staples such as miso\, soy sauce\, mirin\, shio-koji\, and sake that anyone can apply into his or her own kitchen. \nSometimes Chefs have access to fresh ingredients that a forager\, farmer or artisan just harvested or made\, other times they have to deal with what they ordered or shopped for versus what is in the house. It’s really a bigger version of what we all go through at home when tired or busy or exhausted. That doesn’t mean you can’t use something in your pantry\, refrigerator or from your local store and make something filling and very tasty. \nChef Ken Fornataro will show you how to make food if you have miso\, koji\, shio-koji\, soy sauce\, mirin and other ingredients ready to go with  quick trip to the farmers market\, your local salad bar\, the super market or a dig into your CSA box or your pantry or refrigerator. DESCRIPTION:#kojifest2019 is an ongoing series of events hosted by culturesgroup. Expect to learn\, ask questions\, and taste and enjoy great food and drink. \nEach #kojifest2019 event includes different guest presenters and participants sharing and sampling different fermented and handmade foods\, most made with a koji-centric item such as miso\, shio-koji\, or tamari. The events focus on methods and examples of how koji can elevate the taste and nutritional benefits of local and regional foods. Through rapid\, or traditional longer term methods koji can be used to enhance taste\, ferment food or preserve taste for a later time – sometimes years. Koji and other microbes are used throughout the world in many cuisines to create local\, regional and sustainable food and drinks. \nKoji is the most commonly used word to describe Aspergillus oryzae\, a malted mushroom type of microbe that is an enzymatic powerhouse. There are other types of koji that are also members of the Aspergillus family that have their own unique characteristics. Koji has been used for thousands of years but recently with inspired intent to create opportunities for people to share the pleasures and benefits of food and knowledge of how things are made. You might not know how to cook\, or even want to\, but the artistic\, semiotic\, cultural\, and ethnological background of everything shared during #kojifest2019 will inspire you to become more curious and become more informed. \nPresenters will provide tastings of foods that use koji or other fermentation techniques. These include misos\, shoyu\, shio-koji and how the enzymes created by koji can quickly or over time create incredible tastes and nutritional benefits.Some things will be lightly dressed with a probiotic rich sauce\, others will be deeply flavored misos or sauces that highlight a fresh ingredient or can be eaten on top of or in cooked grains\, beans\, vegetable based proteins and sweet desserts. \n\n\n\n\nThe menu for this event is wild. Website: https://www.facebook.com/PenguinFrontier/ \nThursday\, May 16\, 2019 – James Welker presenting on “What We Can Learn from the Circulation and Transformation of Boys Love (BL) Media around Asia” \nPlease RSVP here if you plan on joining us!\n(You must RSVP before attending this event.) \n\nCreated by and for adolescent girls and women\, boys love (BL) media\, depicting romantic and sexual relationships between males\, took root in commercial shōjo manga (girls’ comics) magazines in Japan in the early 1970s. BL quickly spread into other commercial and fan-produced media forms\, including dōjinshi (fanzines)\, “light novels\,” anime\, “drama CDs\,” live action films\, collectible figures\, and video games. With an estimated annual domestic market size in the 2010s of around US$190 million\, BL media clearly has a pronounced presence in Japanese popular culture today. By the early 2000s BL media was becoming a global media phenomenon\, encompassing pirated and licensed translations and locally-produced works. \nOwing perhaps to cultural and geographic proximity\, BL media has found a particularly receptive home in many parts of Asia\, where it has often taken on new meanings and had different fan bases and cultural effects from in its country of origin. After briefly reviewing the emergence of BL and its impact in Japan\, in this talk I will analyze the work of over a dozen scholars researching BL media to discuss the varied sociocultural effects of BL media around East\, Southeast\, and South Asia\, which I am currently compiling into a collection provisionally entitled Queer Transfigurations: Boys Love Media in Asia. These effects range from helping female BL fans reconsider their attitudes towards romance\, sex\, and sexuality in India and the Philippines\, to affecting attitudes about and representation of the LGBTQ community\, including same-sex marriage\, in Indonesia\, Taiwan\, and Thailand\, to facilitating new forms of cultural exchange across the region. \n\nAbout the Lecturer\n\n\n\n\n\nJames Welker\n\nJames Welker is a professor in the Department of Cross-Cultural Studies at Kanagawa University. His research examines gender and sexuality in postwar and contemporary Japan\, including the lesbian community\, radical feminism\, and queer media consumption and production. He is the author of Transfigurations: Feminists\, Lesbians\, and Shōjo Manga Fans in Late Twentieth-Century Japan (Hawai‘i\, forthcoming)\, and co-editor of Rethinking Japanese Feminisms (Hawai‘i\, 2018; with Julia C. Bullock and Ayako Kano)\, Boys Love Manga and Beyond: History\, Culture\, and Community in Japan (Mississippi 2015; with Mark McLelland\, Kazumi Nagaike\, and Katsuhiko Suganuma)\, and Queer Voices from Japan (Lexington\, 2007; with Mark McLelland and Katsuhiko Suganuma). His current projects include editing a volume on the circulation and consumption of boys love (BL) media—media of Japanese origin that depicts male–male intimacy for female fans—around Asia\, editing a special issue of the Asian popular cultural studies journal Mechademia on “Queer(ing)\,” and a collaborative research project supported by a grant from the Japan Society for the Promotion of Science with Fujimoto Yukari\, Kazumi Nagaike\, and Ishida Hitoshi on queer manga and anime narratives\, global fans\, and LGBTQ issues around the world.\n\n\n\n\n\n\n\n\n\n\n\n\nAbout MUNY\nThe Manga University of New York (MUNY) offers a series of lectures on manga/comics by professionals\, including artists\, scholars\, educators\, publishers\, translators\, critics\, and others who are engaged with manga from multiple perspectives. By manipulating the natural colors of each ingredient\, you can design an interesting and delicious sushi piece. Using various natural colors of ingredients you see every day\, Kazari Maki-Zushi is a fun way to play around with sushi designs. This food/art form has been developed for over 150 years\, and still\, new ideas are created everyday in Japan. And it’s even a great way to show off your artistic skills at parties or potlucks! \nAlthough it looks difficult\, this decorative sushi is very simple and easy to make! No prior experience is necessary as it involves a different process than creating regular sushi. Making Kazari Maki-Zushi is much like building with Legos\, where each piece is stacked to make a picture!  \nKazari Maki-Sushi represents an important unique aspect in Japanese food –  not only in taste\, but also in the beautiful visual appearance that serves to please those who enjoy it.
