SUMMARY:What is “Umami”? The Key to Japanese Cuisine
DESCRIPTION:Do you know what “Umami” is? In the beginning of the twentieth century\, a Japanese chemist discovered the flavor and now it is widely known as a fifth taste\, in addition to the sweet\, salty\, sour\, and bitter flavors. You must have experienced it at least once in your life but might have not recognized what exactly umami tastes like\, as the real flavor becomes hidden amongst the flavors in dishes. In this event\, participants will learn from a scientific view of taste and also enjoy a key flavor of Japanese cuisine\, Kombu Dashi (dried kelp soup stock)\, which holds a strong umami taste. Give it a try! \nWhat you will be doing in this workshop:\n\nLearn about the five basic tastes\, the relation between tastes and the representative chemicals that bring out the flavor in foods\, which daily diets include umami components\, and how to enhance the umami flavor.\nExperience comparison tasting tests of several kinds of Dashi\, soup stock which is essential for Japanese cuisine\, and learn about washoku (traditional Japanese cuisine) to explore why Dashi is the key of Japanese cuisine.\n\nUmami of Japanese cuisine\, Dashi from Kombu\nKombu\, a kind of seaweed\, is well-known as an essential raw material for making a soup stock called Dashi for Japanese cuisine. That’s because Kombu is significantly rich in umami components\, such as glutamate and the umami taste can be enhanced by 7 times with the other umami components from meat or fishes. This is called “umami synergy” and is used in a lot of cuisine around the world. Particularly in Japan\, Dashi with its enhanced umami\, is used for a numerous amount of dishes\, including miso soup\, nabe (Japanese style hot pot)\, simmered dishes\, and more. Generally T-shaped\, the kimono is wrapped from back to front and is constructed primarily of rectangular pieces of fabric with little tailoring as it sits in a flattering flat way on the body. \nAlthough still worn today in modern Japan\, artists from all over the world are re-imagining the kimono as pieces of art to suit the current times. \nNow\, we are presenting the Kimono Jacket\, made of materials bought here in local New York stores and inspired by New York outerwear. Created by aspiring Japanese designer Kaho Iwaki\, the Kimono Jacket is dressed in the traditional kimono shape with its big square sleeves and distinctive collar. The jacket is meant to keep the wearer both warm and fashionable\, while expressing the unique shape of the Japanese kimono. \nParticipants are invited to try on the original Kimono Jacket at our January 11th event. We will also offer free photoshoot options if participants are interested!

As this year’s theme revolve around the topic of endangered species and spreading awareness for those that are threatened\, Mitsue has decided to hold a workshop to teach crocheters of all ages and levels how to make an endangered orangutan. This class is meant for everyone\, whether you have crocheted before or not! All supplies will be provided. \nWhy make Orangutan Amigurumi?\nOrangutans fall under the “Endangered Species” category which is the theme for this year’s World Amigurumi Exhibition. Four years ago\, when crocheting an orangutan\, Mitsue studied various topics into ecology and animal habitats inspired by her creation. Since then\, she has created pieces with the message of wildlife protection and environmental conservation incorporated in them. \nMitsue hopes participants will gain interest in orangutans and other endangered species through this workshop. In addition\, “Orang Fujita” will also be a special guest from Japan. Let’s all be friends!\n \nWhat kind of yarn will we be using?\nIn Japan\, the 11-colored Puppy yarn called “Queen Anny” is very popular\, along with the rare\, high-end Mondo Fil yarn brand. We will try crocheting with both yarns to make orangutan amigurumi! (Currently\, there is no store selling the Puppy yarn in the United States. However\, you may order the yarn from Puppy’s online store. This workshop will be a rare opportunity for participants to try crocheting with Puppy yarn!) \nIs this workshop suitable for beginners?\nIt is recommended that participants know the basics of crocheting (such as the single crochet stitch and the magic ring method)\, but those who haven’t trying crocheting are welcome as well. This workshop will cover deliciously soft\, steamed matcha cake made with Japanese rice flour and Amazake\, a sweet and creamy fermented natural drink. \nAlthough Amazake literally means “sweet sake\,” it does not contain any alcohol. A deliciously sweet and creamy natural beverage\, nowadays Amazake is enjoyed as a warming winter drink. Made from mixing rice\, water\, and rice koji\, it is later covered with Koji mold (Aspergillus oryazae) to make the delightful drink. Amazake is made with koji which is cultured rice that has been incubated overnight to produce a lightly fermented food rich in enzymes and nutrients. It has 9 kinds of the essential amino acids\, vitamin B1\, dietary fiber\, and oligosaccharide. As a traditional Japanese ingredient\, amakaze is well enjoyed around the country. \nRice flour is a form of flour made by milling rice finely. It is gluten-free and can be used for a variety of cooking\, including thickening soups and as a substitute for wheat flour. SUMMARY:ORINIGIRI Workshop 15: Making Japanese-Inspired Holiday Gifts using Onigiri!
DESCRIPTION:A strong emphasis is put on wrapping and presenting gifts in Japanese culture. We are accustomed to having things presented in a beautiful manner. In this workshop\, we will be using onigiri (rice ball) decorated with miniature paper Christmas trees that make beautiful and original Japanese-inspired Christmas gifts. Participants will be taught to fold and wrap their onigiri gifts in elegant Japanese paper as perfect presents for all of their loved ones. Two different types of onigiri will be made\, one to enjoy yourself and one that will be used as a Christmas gift. Creating this “ORINIGIRI” gift is simple\, all you need to do is think of a special person you want to give the gift to and you’ll easily be able to create an original Christmas gift!
