SUMMARY:Japanese Vegan Sweets Cooking Class: Steamed Matcha Cake with Japanese Rice Flour and Amazake
DESCRIPTION:Join us for a fun and educational Japanese cooking class with the Natural Sweets Patisserie Association of Japan! This workshop will cover deliciously soft\, steamed matcha cake made with Japanese rice flour and Amazake\, a sweet and creamy fermented natural drink. \nAlthough Amazake literally means “sweet sake\,” it does not contain any alcohol. A deliciously sweet and creamy natural beverage\, nowadays Amazake is enjoyed as a warming winter drink. Made from mixing rice\, water\, and rice koji\, it is later covered with Koji mold (Aspergillus oryazae) to make the delightful drink. Amazake is made with koji which is cultured rice that has been incubated overnight to produce a lightly fermented food rich in enzymes and nutrients. It has 9 kinds of the essential amino acids\, vitamin B1\, dietary fiber\, and oligosaccharide. As a traditional Japanese ingredient\, amakaze is well enjoyed around the country. \nRice flour is a form of flour made by milling rice finely. It is gluten-free and can be used for a variety of cooking\, including thickening soups and as a substitute for wheat flour. Although only often used in Asian countries\, it is currently gathering attention around the world. \nIngredients \n\nRice Flour\nSoy Milk\nAmazake (non-alcohol)\nMatcha\nAluminum-Free Baking Powder\nBlack Sugar\nJapanese red bean\nSalt\nJapanese Sweet Potato\n\nWe will be offering both a kids class (11:00am – 12:30pm) and an adult class (1:30pm – 3:00pm) on the same day. Parents can join the kids class for an additional $20 to the original ticket price.

The amigurumi industry is constantly expanding\, as is the World Amigurumi Exhibition! In this workshop\, we will be using onigiri (rice ball) decorated with miniature paper Christmas trees that make beautiful and original Japanese-inspired Christmas gifts. Participants will be taught to fold and wrap their onigiri gifts in elegant Japanese paper as perfect presents for all of their loved ones. Two different types of onigiri will be made\, one to enjoy yourself and one that will be used as a Christmas gift. Creating this “ORINIGIRI” gift is simple\, all you need to do is think of a special person you want to give the gift to and you’ll easily be able to create an original Christmas gift! These Kazari Maki-Zushi (sushi with special designs and decorations) are not only delicious to eat\, but also cute and fun to make! We’ll be creating two kinds of holiday sushi for this class with natural ingredients (as listed below) that taste great\, just like regular sushi! By manipulating the natural colors of each ingredient\, you can design an interesting and delicious sushi piece. The cute designs on these holiday sushi can be made easily\, so no sushi-making experience is required and it’s a good way to impress your friends at upcoming holiday parties. \n\nIngredients\nSanta Sushi \n\nSushi rice (rice vinegar\, sugar\, salt)\n\nSeaweed\n\n\nSeaweed powder\n\n\nBeets\n\n\nCarrots\n\n\nSeafood sausage\n\n\nCheese sticks\n\n\nMountain gobo (burdock root)\n\nNori\n\nSnowman Sushi \n\nSushi rice (rice vinegar\, sugar\, salt)\nBeets\nBaked Egg\nNori\nKanikama (crab sticks)\n\n \nWhat is Kazari Maki-Zushi?\nKazari Maki-Zushi is a patterned or decorative sushi that is derived from the several sushi techniques such as Saiku sushi and Futomaki sushi. A Kazari Maki-Zushi’s design can be anything – flowers\, fruit\, animals\, words and even logos! Whatever your creativeness allows\, Kazari Maki-Zushi can be almost anything. Using various natural colors of ingredients you see every day\, Kazari Maki-Zushi is a fun way to play around with sushi designs. This food/art form has been developed for over 150 years\, and still\, new ideas are created everyday in Japan. And it’s even a great way to show off your artistic skills at parties or potlucks! \nAlthough it looks difficult\, this decorative sushi is very simple and easy to make! No prior experience is necessary as it involves a different process than creating regular sushi. We will also make Japanese-style veggie broth using dried kelp and shiitake mushroom to make gut-friendly miso soup. \nAs always\, we will cook with hand-picked fresh organic produce and seasonings.
