SUMMARY:KojiFest 2019
DESCRIPTION:#kojifest2019 is an ongoing series of events hosted by culturesgroup. Expect to learn\, ask questions\, and taste and enjoy great food and drink. \nEach #kojifest2019 event includes different guest presenters and participants sharing and sampling different fermented and handmade foods\, most made with a koji-centric item such as miso\, shio-koji\, or tamari. The events focus on methods and examples of how koji can elevate the taste and nutritional benefits of local and regional foods. Through rapid\, or traditional longer term methods koji can be used to enhance taste\, ferment food or preserve taste for a later time – sometimes years. Koji and other microbes are used throughout the world in many cuisines to create local\, regional and sustainable food and drinks. \nKoji is the most commonly used word to describe Aspergillus oryzae\, a malted mushroom type of microbe that is an enzymatic powerhouse. There are other types of koji that are also members of the Aspergillus family that have their own unique characteristics. Koji has been used for thousands of years but recently with inspired intent to create opportunities for people to share the pleasures and benefits of food and knowledge of how things are made. You might not know how to cook\, or even want to\, but the artistic\, semiotic\, cultural\, and ethnological background of everything shared during #kojifest2019 will inspire you to become more curious and become more informed. \nPresenters will provide tastings of foods that use koji or other fermentation techniques. These include misos\, shoyu\, shio-koji and how the enzymes created by koji can quickly or over time create incredible tastes and nutritional benefits. Some things will be lightly dressed with a probiotic rich sauce\, others will be deeply flavored misos or sauces that highlight a fresh ingredient or can be eaten on top of or in cooked grains\, beans\, vegetable based proteins and sweet desserts. \n\n\n\n\nThe menu for this event is wild. Mallory O’Donnell\, Aline Bessa and Ken Fornataro have been foraging\, fermenting and preparing for this event that will include these things (maybe subs since some stuff is sustainably foraged): \n\n\n\n\n\nMushrooms Fermented in Maple Sap with Wild Herbs\nWild Greens Pkhali\nPorcini Black Trumpet and Leek Nuta with Homemade Miso\, Vinegar and Wild Seed Mustard\nWild Mushroom and Mushroom Miso Tapenade\nSweet simmered miso\nBlack beans with smoked mushroom bacon\nTucupi miso soup (a fermented yuca broth\, szechuan buttons (jambu)\, cilantro and spring vegetable\nNut cheese using miso made with sour tapioca starch\nYucca rolls (vegan pães de queijo)\nPuba (fermented yucca) pudim with miso caramel\nPickles (kumquat and carrot\, shio-koji cucumbers\, tempero baiano style mushrooms)\nRice\, garnished (eggplant chutney\, date and ginger douchi\, cashew\, garlic\, herb pesto) \nMushroom Tea\n\nTwo very talented contributors of new and exciting things to the ongoing food conversation are joining Chef Ken Fornataro for this event.

SUMMARY:MUNY #3: What We Can Learn from the Circulation and Transformation of Boys Love (BL) Media around Asia
DESCRIPTION:Header Image by Penguin Frontier. Used with permission. Copyright 2013. Website: https://www.facebook.com/PenguinFrontier/ \nThursday\, May 16\, 2019 – James Welker presenting on “What We Can Learn from the Circulation and Transformation of Boys Love (BL) Media around Asia” \nPlease RSVP here if you plan on joining us!\n(You must RSVP before attending this event.) \n\nCreated by and for adolescent girls and women\, boys love (BL) media\, depicting romantic and sexual relationships between males\, took root in commercial shōjo manga (girls’ comics) magazines in Japan in the early 1970s. BL quickly spread into other commercial and fan-produced media forms\, including dōjinshi (fanzines)\, “light novels\,” anime\, “drama CDs\,” live action films\, collectible figures\, and video games. With an estimated annual domestic market size in the 2010s of around US$190 million\, BL media clearly has a pronounced presence in Japanese popular culture today. By the early 2000s BL media was becoming a global media phenomenon\, encompassing pirated and licensed translations and locally-produced works. \nOwing perhaps to cultural and geographic proximity\, BL media has found a particularly receptive home in many parts of Asia\, where it has often taken on new meanings and had different fan bases and cultural effects from in its country of origin. After briefly reviewing the emergence of BL and its impact in Japan\, in this talk I will analyze the work of over a dozen scholars researching BL media to discuss the varied sociocultural effects of BL media around East\, Southeast\, and South Asia\, which I am currently compiling into a collection provisionally entitled Queer Transfigurations: Boys Love Media in Asia. These effects range from helping female BL fans reconsider their attitudes towards romance\, sex\, and sexuality in India and the Philippines\, to affecting attitudes about and representation of the LGBTQ community\, including same-sex marriage\, in Indonesia\, Taiwan\, and Thailand\, to facilitating new forms of cultural exchange across the region. \n\nAbout the Lecturer\n\n\n\n\n\nJames Welker\n\nJames Welker is a professor in the Department of Cross-Cultural Studies at Kanagawa University. His research examines gender and sexuality in postwar and contemporary Japan\, including the lesbian community\, radical feminism\, and queer media consumption and production. He is the author of Transfigurations: Feminists\, Lesbians\, and Shōjo Manga Fans in Late Twentieth-Century Japan (Hawai‘i\, forthcoming)\, and co-editor of Rethinking Japanese Feminisms (Hawai‘i\, 2018; with Julia C. Bullock and Ayako Kano)\, Boys Love Manga and Beyond: History\, Culture\, and Community in Japan (Mississippi 2015; with Mark McLelland\, Kazumi Nagaike\, and Katsuhiko Suganuma)\, and Queer Voices from Japan (Lexington\, 2007; with Mark McLelland and Katsuhiko Suganuma). His current projects include editing a volume on the circulation and consumption of boys love (BL) media—media of Japanese origin that depicts male–male intimacy for female fans—around Asia\, editing a special issue of the Asian popular cultural studies journal Mechademia on “Queer(ing)\,” and a collaborative research project supported by a grant from the Japan Society for the Promotion of Science with Fujimoto Yukari\, Kazumi Nagaike\, and Ishida Hitoshi on queer manga and anime narratives\, global fans\, and LGBTQ issues around the world.\n\n\n\n\n\n\n\n\n\n\n\n\nAbout MUNY\nThe Manga University of New York (MUNY) offers a series of lectures on manga/comics by professionals\, including artists\, scholars\, educators\, publishers\, translators\, critics\, and others who are engaged with manga from multiple perspectives. We hope to deepen the knowledge of the medium\, industry\, education\, and culture surrounding manga in North American or other contexts in dialogue with the invited experts. We welcome everyone to participate and be a part of discussion while enjoying delightful meals and drinks available at RESOBOX! \nMUNY has evolved from and works in conjunction with MaRRN (Manga Research and Reading Network). \nSign up for our newsletter here!

SUMMARY:How I Created my own Manga in Japan
DESCRIPTION:Fascinated with Japan from an early age\, American Benjamin Boas first learned the language via manga and video games\, and then penned a comic of his own. Loosely translated as ‘I Learned about Japan from Manga and Video Games’\, this entertaining tome recounts Ben’s experiences in manga form\, and should be easy enough to understand even if your Japanese reading skills aren’t perfect. For this talk and book signing\, the author will speak about how his love of Japanese pop culture brought him to Japan and led him to create his very own comic. It’ll include tips on studying Japanese\, the process of publication in Japan and much more!

SUMMARY:Unique Sushi Roll Workshop Vol. 16 Peach Flower and California Roll
DESCRIPTION:Get ready for spring with these delicious sushi rolls! At this workshop\, we’ll be making everyone’s favorite California roll as well as a unique peach flower sushi roll! Impress your friends with what you learn about this Kazari Maki-Zushi class! These two kinds of character sushi for this class are made with natural ingredients (as listed below) that taste great\, just like regular sushi! By manipulating the natural colors of each ingredient\, you can design an interesting and delicious sushi piece. The cute designs on these Spring sushi can be made easily\, so no sushi-making experience is required and it’s a good way to impress your friends at any party! \nIngredients\nPeach flower \n\nSushi Rice\nBeets\nSeafood Cheese Sticks\nSpinach\nSeaweed\nSesame seeds\n\nCalifornia roll \n\nSushi Rice\nSmoked Salmon\nAvocado\nCucumber\nCream Cheese\nSeaweed\nSesame Seeds\nCrab Sticks\n\nIn this class\, we’ll be teaching participants how to make the classic California roll as well as unique sushi rolls called Kazari Maki-Zushi. Kazari Maki-Zushi is a patterned or decorative sushi that is derived from the several sushi techniques such as Saiku sushi and Futomaki sushi. It is undoubtedly sushi\, but the appearance and design of each roll are filled with endless possibilities! A Kazari Maki-Zushi’s design can be anything – flowers\, fruit\, animals\, words and even logos! Whatever your creativeness allows\, Kazari Maki-Zushi can be almost anything. Using various natural colors of ingredients you see every day\, Kazari Maki-Zushi is a fun way to play around with sushi designs. This food/art form has been developed for over 150 years\, and still\, new ideas are created everyday in Japan. And it’s even a great way to show off your artistic skills at parties or potlucks! \nAlthough it looks difficult\, this decorative sushi is very simple and easy to make! No prior experience is necessary as it involves a different process than creating regular sushi. Making Kazari Maki-Zushi is much like building with Legos\, where each piece is stacked to make a picture!  \nKazari Maki-Sushi represents an important unique aspect in Japanese food –  not only in taste\, but also in the beautiful visual appearance that serves to please those who enjoy it. Making Kazari Maki-Zushi is also a great way to enjoy company\, whether it be friends or family and is especially popular with kids! Even if your homemade Kazari Maki-Zushi isn’t well-prepared\, the process of making and seeing your finished pieces on the dining table creates joy for all who see (and eat!) it. \nFor more workshops in this series\, visit our Japanese Cooking Workshop and Kazari Maki-Zushi Workshop Series page.

DESCRIPTION:Everyone knows Japanese cuisine is filled with delicious dishes and healthy flavors! To create a tasty Japanese dish\,  a lot of “crafting” is done in the cooking process to create a more enjoyable and perfected meal. In this event\, we will hold three workshops on the theme of “crafting and experiencing familiar Japanese food.” \nWhat you will be doing in this workshop:\n \n\nLearn about traditional Japanese food\, such as onigiri and miso soup\nMake your own ORINIGIRI\, decoration seaweed and miso balls\nAdmire and take pictures of your creations\n\nORINIGIRI\nORINIGIRI is a new type of art (and way of eating!) that combines the fun features of “Origami” and “Onigiri (Rice balls).” The huge difference between Onigiri (rice balls) and ORINIGIRI is whether is how it entertains you through the creation. ORINIGIRI includes a folding process as a form of entertainment\, which is meant to be a fun experience. You will often see this kind of entertaining making process not in only food but in the whole culture of Japan. \n \nDecoration Seaweed\nJapanese people enjoy cutting seaweed into cute artistic shapes and patterns. In this workshop\, you can try creating your own form of seaweed art work by using craft punchers and colorful rice. \n \nMiso ball\nMiso ball is round ball made of miso and other Japanese ingredients. Miso soup can be made easily by melting the miso. In addition\, miso balls can be easily made by rolling decorating it with other tasty ingredients. \n \nPrevious Workshops\n\nORINIGIRI Workshop 1: A Combination of Origami and Onigiri\nORINIGIRI Workshop 2: Let’s Enjoy Creating and Cooking ORINIGIRI\nORINIGIRI Workshop 3: Discover the Real Taste of Rice by Making ORINIGIRI!\nORINIGIRI Workshop 4: Adopt a Japanese home-style meal to put on your table!\nORINIGIRI Workshop 5: Let’s make KAWAII (CUTE) “ORINIGIRI”!\nORINIGIRI Workshop 6: Much Mochi to Munch on!\nORINIGIRI Workshop 7: Create Your Own USA Version “ORINIGIRI!”\nORINIGIRI Workshop 8: Let’s try making a photogenic “BENTO” lunchbox!\nORINIGIRI Workshop 9: Shaping your own rice ball canvas\nORINIGIRI Workshop 10: Making 3D ORINIGIRI Digitally and By Hand\, & the Future of “ORINIGIRI” Hackathon\nORINIGIRI Workshop 11: Learn About Famous Japanese Fairy Tale ”Momotaro (Peach Boy)” and Make Your Own ORINIGIRI!

SUMMARY:Japanese Sweets Workshop Vol. 1 Dorayaki (Bean Paste Pancake)
DESCRIPTION:Dorayaki is a traditional Japanese sweet that is made of azuki (red bean paste) sandwiched in between two small pancakes. As a common Japanese snack\, dorayaki has a mildly sweet taste perfect for all ages! \nSince sweet azuki paste takes quite a long time to make\, we will be using ready-made red bean paste in this class. Each Japanese pancake is made of flour\, egg\, honey\, sugar\, mirin (Japanese seasoning) and baking soda. Several pancake fillings will be prepared and participants will be able to choose their own favorite filling! Participants will also be able to mark their dorayaki with a cute symbol. Everyone is invited to use their own artistic inspirations to create a one-of-a-kind design for their dorayaki. \nDorayaki go great as gifts for people who love sweets\, and go very well with a cup of hot Japanese green tea too!

DESCRIPTION:About “Karappo” (Live Art Performance)\nI\, the painter\, Ryoko has done her live painting with various DJ\, musicians\, make-up & hair artists\, and dancers. I’ve decided to perform these pieces with drummer Matsu titled “karappo.” I have known Matsu for around ten years and have always admired his performances and respect his feelings for music. I’m very glad to have this chance to perform alongside him. \n“Karappo” means “empty” in Japanese. Sometimes thinking too much may break a person. Only genuineness is eternal. It is important to just feel. \nWe aren’t attaching any themes to “Karappo.” RESOBOX is opening their space for us. The audience’s breaths\, voices\, and noises will make the air there. The air is going to make Matsu’s sounds. The sounds is going to make Ryoko’s art.  \nI’ll put my all on the canvas in the moment.

SUMMARY:Vegan Japanese Cooking Workshop: Cook with Miso to Fuel Your Body and Mind
DESCRIPTION:In this class\, you will learn how to cook with miso\, an ancient Japanese superfood which is made from protein-rich soybeans. Miso is an essential base of Japanese cooking which has the saltiness\, sweetness\, and umami all in one. The class setting will be a small group of up to six people for a more interactive\, hands-on experience for all participants. \nThe dishes we are cooking together will be Miso-glazed Tofu Bowl and Aunti Mieko’s GMMD (Goma Miso Mayo Dip). The recipe was created with ingredients that you can find in the majority of local grocery stores that carry asian ingredients. It was also designed in a way that you can recreate the dishes at home using the techniques you learn in the class. We will be cooking with hand-picked fresh organic produce and non-GMO ingredients. \nIn the beginning of the class\, we will go over basic types of miso\, its flavor profiles and characteristics\, health benefits of miso and fermented food. Then we will cook the dishes together using other Japanese cooking essentials like soy sauce\, mirin (cooking wine) and tofu. At the end of the class we will sit down at a table and enjoy the food we made. If the participants are interested\, the instructor will show off a few food photography hacks using your smartphone for beautiful instagram photos! \n

SUMMARY:FLOATING WORLD: Pleasure & Entertainment in Meiji Japan
DESCRIPTION:Nineteenth Century Photographs from The Burns Archive\nRESOBOX gallery is proud to present the seventh annual exhibition from The Burns Collection & Archive. The floating world encapsulates the hedonistic urban lifestyle\, especially the pleasure seeking aspects\, that emerged during Edo period Japan. Images of floating world culture depict the pleasures and entertainments of Meiji Japan – the world of geishas and courtesans\, kabuki actors\, and sumo wrestlers. Tea houses\, theaters and brothels are backdrops for the floating world’s universe of extravagance. Ukiyo-e means “pictures of the floating world\,” and in the spirit of the colorful woodblock prints created during the Edo period\, this exhibit utilizes original nineteenth century hand-painted photographs reproduced on varied media\, such as wood and metal\, as well as original historic prints. \n\nThe Burns Collection & Archive\nFrom the birth of photography through the modern age\, with more than one million historic photographs\, The Burns Archive provides photographic evidence of forgotten\, unseen and disquieting aspects of history. It was established in 1975 by Stanley B. Burns\, MD\, FACS\, a New York City ophthalmologist and photo-historian. For over forty years\, thousands of publishers\, exhibitors\, authors\, researchers\, artists and filmmakers have utilized this unique source of visual documentation. The Archive is best known for images of the darker side of life – death\, disease\, crime\, racism\, revolution and war – however\, a large part of the collection depicts aspects of social and cultural life. A favorite and compelling category are nineteenth-century Japanese hand-painted photographs. \nDr. Burns and his daughter Elizabeth have co-authored two books on Japanese photographic history\, Setting Sun: Painted Photographs of Meiji Japan (2017) and Geisha: A Photographic History 1872-1912 (2008)\, which explores the life and culture of Geisha during the Meiji Era. They have produced multiple exhibitions of Japanese photography\, including many at the RESOBOX Gallery\, Geisha: The Golden Years 1870-1890 (2012)\, Working Life in Meiji Japan (2013)\, Japan – An Island Nation: 1870-1890 (2014)\, Japanese Ritual Industry: Silk\, Rice & Tea (2015)\, Worship in Meiji Era Japan (2016) and Fujisan: Eternal Symbol of Japan (2017).\n \nwww.burnsarchive.com
