Sushi rolls (eho-maki) are one of most widely known Japanese foods. Making a beautiful sushi roll is truly a culinary art! It’s customary to eat such sushi rolls on Feburary 3rd, which is known as Setsubun.
Setsubun is a festival thought to be the New Year’s Eve to the Old New Year. During Setsubun, people dispel evil from the previous year with mamemaki (bean-scattering). Beans are throw out the door of the house or at a family member dressed up as a demon in order to get rid of all the evil from the year before. Then, they will eat handmade sushi rolls in silence while facing the year’s lucky direction. These practices are thought to bring good luck in the new year.
In this workshop led by instructor Asako Nonaka, you will learn how to make your own sushi rolls that are easy enough to make at home. First, she will describe sushi rolls and their relevance to Setsubun. Then, she will demonstrate how to make a sushi roll. After that, you can try making your own sushi roll! It will be a delicious and enjoyable experience, so please join us!

About the Instructor
Asako Nonaka is a Certified Integrative Nutrition Health Coach born in Tokyo, Japan in 1981. In 2012, she moved to New York. After graduating from the Institute for Integrative Nutrition in 2014, she launched “Asakology” to introduce Japanese healthy food through blogging and holding cooking classes. She is also a health coach whose goal is to create a healthy and happy life for her students. Her other work with RESOBOX Gallery includes Handmade SOBA Workshop -Learn, Cook, and Eat SOBA- held on December 14, 2014.
