Class/Tasting Overview
Please join us in making your own tofu to take home, and enjoy tasting different types of natural tofu dishes and Nanbu Bijin sake from Japan!
We are excited to host this one-time-only event in collaboration with a special guest from Japan, Shizukuishi Tofu Kobo, an organic artisanal tofu maker from Iwate prefecture.
This 2-hour event will feature:
- Introduction to tofu and lecture on how tofu is made
- Make-your-own tofu making experience
- Hands-on cooking class using tofu, deep-fried tofu pouches, and premium yuba (silky tofu ribbon)
- Tofu and sake tasting
The event will start with a hearty Japanese tea to welcome the guests and a walk-through on the history of Tofu Kobo founded in 1968.
Tofu Kobo CEO, Ms. Kanako Fukuoka, will share her story in her tireless challenges in replacing machine automation production process with a more traditional way of making tofu by hand.
The tofu making session will be led by Ms. Fukuoka, and Katy Tanaka, a RESOBOX Japanese vegan food cooking class instructor.
Guests will have a chance to make their own tofu using organic soy milk.
We are also very lucky to get to taste tofu from Tofu Kobo delivered straight from Japan right before the day of the event!
We will have a variety of tofu such as plain, black sesame, edamame, premium yuba-layered tofu made with non-GMO organic soy beans which make the real and most purest form of tofu.
Also, we hope you will enjoy a casual four course Japanese meal prepared with tofu which includes premium yuba zen sushi, braised “ganmo” tofu nuggets, grilled tofu pouch stuffed with seasoned steamed rice, and tofu dessert.
**Please note that the ticket price for the event has two tiers: one for $80 which does not include the sake tasting, the other one for $100 which includes the sake tasting.

About the Instructors
Kanako Fukuoka
Kanako Fukuoka, a female owner and CEO of an artisanal tofu factory based in Iwate, Japan. Her Tofu Kobo (“workshop/atelier”) was established in 1968 by her grandparents. After her father’s death, Kanako learned the art of tofu making from scratch and has revamped her family-owned and proudly produces hand-crafted organic tofu and other healthful and delicious soy products.
Kanako is a cancer survivor and battled with other life-threatening health conditions such as cerebral contusion and subarachnoid hemorrhage. Through her battle and recovery experience, she realized that the food her family has been making for generations is a wholesome and healthful Japanese super food. Her tofu embodies the concept of “You are what you eat”, and she takes pride in producing them with organic, non-GMO soybeans with no artificial flavors or preservatives. Her tofu is made by hands with love and passion in providing real food with real ingredients.
Katy Tanaka
Katy is a Japanese plant-based food creator originally from Japan. She shares her love and passion in a vegan lifestyle through wholesome delicious food that have no compromise in taste or satisfaction. Her creations frequently feature nutrient-rich superfoods that can help elevate your energy and mood. She can also share her instagrammable food photography hacks using your smartphone.
