Join us in ringing in the Lunar New Year, sushi-style! These Kazari Maki-Zushi (sushi with special designs and decorations) are not only delicious to eat, but also cute and fun to make! We’ll be creating two kinds of decorative sushi for this class with natural ingredients (as listed below) that taste great, just like regular sushi! By manipulating the natural colors of each ingredient, you can design an interesting and delicious sushi piece. The cute designs on these draconic sushi can be made easily, so no sushi-making experience is required and it’s a great way to impress your friends when hosting parties.

Ingredients

Seahorse Sushi:

  • Seaweed
  • Sushi rice
  • Beets powder
  • Carrot
  • Spinach

Dragon roll:

  • Seaweed
  • Sushi rice
  • Avocado
  • Cucumber
  • Tobiko
  • Kanikama
  • Salmon
  • Radish sprouts
  • Sesame seeds

What is Kazari Maki-Zushi?

Kazari Maki-Zushi is a patterned or decorative sushi that is derived from the several sushi techniques such as Saiku sushi and Futomaki sushi. It is undoubtedly sushi, but the appearance and design of each roll are filled with endless possibilities! A Kazari Maki-Zushi’s design can be anything – flowers, fruit, animals, words and even logos! Whatever your creativeness allows, Kazari Maki-Zushi can be almost anything. Using various natural colors of ingredients you see every day, Kazari Maki-Zushi is a fun way to play around with sushi designs. This food/art form has been developed for over 150 years, and still, new ideas are created everyday in Japan. And it’s even a great way to show off your artistic skills at parties or potlucks!

Although it looks difficult, this decorative sushi is very simple and easy to make! No prior experience is necessary as it involves a different process than creating regular sushi. Making Kazari Maki-Zushi is much like building with Legos, where each piece is stacked to make a picture! 

Kazari Maki-Sushi represents an important unique aspect in Japanese food –  not only in taste, but also in the beautiful visual appearance that serves to please those who enjoy it. Making Kazari Maki-Zushi is also a great way to enjoy company, whether it be friends or family and is especially popular with kids! Exciting Wagashi Making Lesson in the Heart of NYC!

Indulge in the art of Wagashi, a traditional Japanese confectionery served at prestigious tea ceremonies. Join us for a hands-on experience crafting Wagashi using the exquisite “Beni Haruka” Japanese sweet potato and premium matcha from Japan.

We’ll be making two delicious and beautiful Wagashi during this workshop: Satsumaimo Daifuku (sweet potato paste wrapped in mochi) and Matcha Imo Yokan (green tea and sweet potato jelly)

Students are asked to bring their own apron and hand towel, and those with long hair are asked to tie it back for this lesson.

The holidays are here!! Get in the holiday spirit and prepare some holiday sushi at our newest Unique Sushi class. These Kazari Maki-Zushi (sushi with special designs and decorations) are not only delicious to eat, but also cute and fun to make! We’ll be creating two kinds of holiday sushi for this class with natural ingredients (as listed below) that taste great, just like regular sushi! By manipulating the natural colors of each ingredient, you can design an interesting and delicious sushi piece. HANADOJO, representing the Ohara School of Ikebana NY Chapter, is delighted to present “By Special Arrangement: Ohara Ikebana Full-Day Workshop” on Saturday, October 21st. This workshop has been thoughtfully designed to deepen your appreciation of the Ohara School of Ikebana, welcoming nature and flower enthusiasts of all skill levels.

As part of this unique opportunity, we are pleased to host a distinguished guest from Tokyo! An assistant professor affiliated with the Council of Ohara Professors will be in attendance, and students will have the valuable opportunity to receive feedback and critiques from our esteemed guest, enriching the learning experience.

Students will be split into groups based on skill level and experience. For students actively enrolled in Ohara’s curriculum, completing these assignments will allow you to accumulate a total of 3 credits toward certification. If you’re joining an Ohara class for the first time, you will learn a total of 2 arrangements for 2 credits.

The chashaku 茶杓 is also referred to as “the sword of the tea master”. Beginning with Sen-no-Rikyu and Furuta Oribe, many tea masters have carved their own chashaku to express their personal aesthetic sense. These chashaku are known through historical record, and some survive to this day.

Just as a Zen monk puts their whole spirit into their brush when creating their work of calligraphy and just as a warrior puts all of their power into a single cut of the sword, the chashaku is the ultimate utensil that embodies the tea master’s soul.

You don’t need to be a tea master to make your own chashaku. Chanoyu Week NYC 2023 presents this lecture, workshop, and matcha making session to offer you first-hand experience – no prior knowledge required. Once you finish carving and are ready to enjoy tea, the final touch is naming your chashaku with a simple word that symbolizes your thoughts in this special moment. Let’s carve the one and only chashaku in the world that represents the “you” in 2023 together!

Because of the use of knives and sharp tools for carving, this workshop is not recommended for young children. The organizers are not responsible for any injuries sustained during this workshop. Participants should wear comfortable clothing that may get messy during the carving process.

Would you like to make vegan ramen using delicious Japanese dried shiitake mushrooms? Make everything from scratch, from the noodles to the soup! Even vegan soup, which is often less flavorful, can be totally delicious when you know which ingredients to use, and how best to cook it!

Did you know you can make your own ramen noodles? After this class, you’ll be able to make them yourself. Each participant will make their own serving of ramen noodles. The ideal bowl of vegan ramen is healthy and packed with plenty of vegetables, and we’ll show you the best techniques to use when making it.

In this workshop, we will be using shiitake mushrooms from SUGIMOTO Shiitake, a renowned shiitake wholesaler in Miyazaki Prefecture, in Japan. We will also teach you the best way to rehydrate dried shiitake mushrooms and use their additive-free shiitake powder, something that can be hard to find from other vendors. There are tricks to using the powder, so if you’re not familiar with it, come and learn!

Ingredients Used:

• Noodles: Bread flour, salt, water, baking soda, cornstarch
• Soup: Kombu, rehydrated shiitake mushroom liquid, shiitake powder, white miso, red miso, barley miso, sesame paste, peanut butter, soy milk, salt
• Bean sprouts: Red chili pepper, sesame oil, black pepper, salt, soy sauce
• Dried Shiitake: Garlic, sesame oil, soy sauce, sugar
• Green onions

In this workshop, even beginners to brush pens can make words into art using “tsutefude,” or brush pen technique. Tsutefude has become popular in Japan in recent years as a more accessible style of calligraphy. In Japan, the cultural tradition of calligraphy known as “shodo” has blossomed over the centuries, yet even Japanese people can struggle with handling the brushes and obtaining the materials needed to practice, like inkstone and sumi ink. The brush pen used in this workshop retains the feel of a traditional brush while containing ink similar to fountain pen ink, allowing the ink to flow through the tip. This allows people of all experience levels and backgrounds to enjoy calligraphy!

This workshop covers everything you need to know to make beautiful artwork:

1. Learn how to use a brush pen:

Characteristics of a brush pen
How to hold a brush pen
How to create lines with a brush pen

2. Practice by imitating examples in both Japanese and English using the tsutefude technique:

Choose from two examples and practice the characters:
1. 愛(Love)
2. 笑顔(Smile)

3. Use a brush pen in your favorite color to create a message card:

Pick either a postcard or a folded greeting card, and decorate it using the characters practiced in step 2

All materials will be provided for this event, so you don’t need to bring anything other than yourself!
