Theme of the Month: Yuzu

What is Yuzu?
Yuzu (Citrus junos, citron) is an exotic citrus fruit mainly grown in Japan, Korea and China. With tough yellow skin and the size of a small grapefruit, Yuzu is both tart and tangy and known to be a mix between a grapefruit and a lime.

HB Kitchen is a native from Hokkaido, Japan and studied baking, pastry, and Wagashi (Japanese sweets) for many years. As a mother of four children and always concerned with “healthiness” of baked goods, she makes non-preservative and uses organic ingredients as much as possible. She also holds a Level 1 instructors certification for decorative sushi from JSIA (Japan Sushi Instructors Association).
