On January 24, 2025, Sugimoto Shiitake, a log-grown shiitake mushroom wholesaler based in Miyazaki Prefecture, exhibited their products at “Taste of Japan in Chicago,” a Japanese food trade event organized by JETRO Chicago.
Sugimoto Shiitake’s premium log-grown shiitake mushrooms are already widely appreciated in New York, and this event marked a new step toward increasing their visibility in the broader U.S. market. The event attracted many chefs from Chicago’s local restaurants as well as representatives from food distributors, creating valuable opportunities for business discussions and networking.
The richly aromatic and thick-fleshed shiitake mushrooms caught the attention of attendees not only for their suitability in vegan menus but also for their versatility in a wide range of international cuisines beyond traditional Japanese food. The mushrooms received high praise from many participants, and led to discussions with a local spice shop that are still ongoing.
